Ingredients
  • 3 medium steamed sweet potatoes
  • 1/2 medium onion, finely chopped
  • 1 Tbsp unsalted butter
  • 4 cups milk (approx. 950ml)
  • 1 cup cooked corn kernels (from boiled corn)
  • 1 tsp salt

Cooking Instructions

Step 1

First, prepare 3 medium steamed sweet potatoes. Using leftover steamed sweet potatoes makes this recipe even more convenient.

Step 2

Peel the sweet potatoes and cut them into roughly large pieces. This will help them break down easily while simmering. If you plan to use a blender or immersion blender, you can chop them smaller.

Step 3

In a pot over medium heat, melt 1 tablespoon of unsalted butter. Once melted, add the finely chopped onion and sauté together to release its fragrance.

Reduce the heat to low to prevent burning, and gently sauté the onions until they become transparent and soft. This step enhances the sweetness of the onions, adding depth to the soup’s flavor.

Add the chopped steamed sweet potatoes to the softened onions and sauté for about 1-2 minutes, stirring to coat them evenly with the butter and onion mixture.

Now, pour in 4 cups (approximately 950ml) of milk. The consistency of the soup can be adjusted by adding more or less milk, depending on the amount of sweet potato or your preferred thickness.

After adding the milk, stir continuously to prevent the sweet potatoes from sticking to the bottom of the pot. Once it starts to simmer, reduce the heat to medium-low.

When the soup comes to a gentle simmer, add 1 cup of cooked corn kernels. The popping corn kernels will add a delightful texture to the soup.

Once the sweet potatoes are tender and well-cooked, use a potato masher or an immersion blender to break them down. Mash the sweet potatoes until smooth, leaving the corn kernels slightly intact for texture. If using a regular blender, carefully transfer the hot soup and blend until smooth. (Be cautious as it’s hot!)

Finally, add 1 teaspoon of salt to season the soup. Taste and adjust the salt as needed to your preference.
