Ingredients- Egg Pasta 250g
Seasoning & Others- 2 Eggs
- Pinch of Salt
- 1 Tbsp Tuna Extract (Fish Sauce)
- 7-8 Peperoncino (or dried chili peppers)
- 6-7 Cloves Garlic
- 1 Handful of Green Onion
- 2 Tbsp Olive Oil
- Pinch of Black Pepper
- 2 Eggs
- Pinch of Salt
- 1 Tbsp Tuna Extract (Fish Sauce)
- 7-8 Peperoncino (or dried chili peppers)
- 6-7 Cloves Garlic
- 1 Handful of Green Onion
- 2 Tbsp Olive Oil
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare 250g of egg pasta. (No Brand egg pasta recommended!)
Step 2
Bring a generous pot of water to a rolling boil. Once boiling, add the prepared egg pasta to the water.
Step 3
Add a pinch of salt to the boiling water while cooking the pasta; this will season the pasta itself. Cook the pasta according to your preference for texture. For a slightly firm, al dente bite, cook for 5-6 minutes. For a softer, more common texture preferred by many, cook for 7-7.5 minutes. Stir the pasta occasionally to prevent it from sticking together.
Step 4
Once the pasta is cooked, drain it and immediately rinse under cold water to cool it down. Then, place it in a colander to drain thoroughly. This step helps prevent the pasta from becoming mushy or clumping.
Step 5
To the drained pasta, add 2 eggs, a pinch of salt, and a dash of black pepper. Gently toss the pasta with chopsticks or a fork until the egg mixture evenly coats the noodles. Mix lightly so the egg coats the pasta like a sauce.

Preheat a deep frying pan or wok over medium heat, then add 2 tablespoons of olive oil. (Using butter will add even richer flavor.) Once the pan is hot, add the sliced garlic, peperoncino, and roughly chopped green onions. Sauté them gently until the garlic turns golden brown and aromatic. Be careful not to burn the garlic; slow cooking develops its flavor.
Step 7
Add the egg-coated egg pasta to the pan with the fragrant sautéed garlic, peperoncino, and green onions. Gently stir-fry to allow the flavors to meld. It’s best to cook over medium heat rather than high heat to prevent the eggs from scrambling into clumps and to ensure they blend well with the pasta. Stir gently to coat the pasta evenly with the aromatics.

Taste the pasta and adjust the seasoning as needed by adding 1 tablespoon of tuna extract or more salt. Tuna extract can add a nice umami depth. After adjusting the seasoning, stir-fry for a little longer to ensure all ingredients are well combined.

For an extra touch of freshness and aroma, you can finely shred some perilla leaves (shiso leaves) after rolling them up and sprinkle them on top. (Optional)
