Main Ingredients
  • 2 cups short-grain rice (approx. 400ml)
  • 6 small potatoes (approx. 400g)
  • 1/2 onion (small size)
  • Small amount of carrot

Seasoning
  • 1/2 tsp sea salt
  • 2 Tbsp sesame oil

Cooking Instructions

Step 1

First, rinse the 2 cups of short-grain rice thoroughly and soak it in cold water for about 30 minutes. Soaking the rice makes the porridge much smoother and creamier.

Step 2

Peel the potatoes and cut them into 1cm cubes. Dice the onion into similar-sized pieces, and finely chop the carrot. Cutting the vegetables small will help them break down and blend into the porridge as it cooks.

Step 3

In a wide pot, drain the soaked rice well using a sieve. Add the prepared potatoes, onion, and carrot. Drizzle in 2 tablespoons of sesame oil and stir-fry over medium-high heat until the rice grains become translucent and the vegetables soften slightly. It’s crucial to keep stirring to prevent the rice from sticking to the bottom of the pot.

Step 4

After stir-frying the rice and vegetables, carefully pour in the water the rice was soaking in, along with 800ml (4 cups) of fresh water. Use a spoon to scrape any stuck rice grains from the bottom of the pot and stir everything together evenly.

Step 5

Once the liquid begins to boil, keep the heat on high, cover the pot with a lid, and let it cook for about 10 minutes. Boiling on high heat for the first 10 minutes helps the rice grains break down nicely and achieve a good porridge consistency.

Step 6

After 10 minutes, reduce the heat to medium-low and continue to cook, uncovered, stirring occasionally from the bottom to prevent sticking.

Step 7

As the porridge simmers, you’ll smell a delicious aroma, and the rice grains will soften and start to break apart, making a ‘pock pock pock’ sound. This is when it’s at its most delicious. Continue to cook for another 5-10 minutes, or until you reach your desired thickness.

Step 8

Once the porridge has reached your preferred consistency, give it a final quick stir from the bottom to ensure nothing is sticking and finish cooking.

Step 9

Finally, add 1/2 teaspoon of sea salt and stir well to season. Your comforting and creamy potato porridge is ready! If you prefer a thinner consistency, you can add a little more water or broth to adjust.

Step 10

The initial seasoning is kept light, so when serving, feel free to add a dash of soy sauce and a drizzle of sesame oil to taste for an extra flavor boost.
