  • 3-4 medium potatoes
  • 2 ripe tomatoes
  • 150g mozzarella or cheddar cheese (adjust to your preference)
  • 1/2 medium onion (or desired amount)

Sauce & Seasonings

  • Pinch of black pepper
  • Pinch of salt
  • 2 Tbsp stevia or sugar (adjust sweetness to taste)
  • 1 Tbsp lemon juice (for a touch of brightness)

Cooking Instructions

Thoroughly wash the potatoes and peel them. Cut them into bite-sized pieces, about 1.5 cm thick. Season the cut potatoes with a pinch of salt and pepper. Place the seasoned potatoes in a microwave-safe dish, cover with plastic wrap, and microwave for about 5-7 minutes, or until the potatoes are slightly tender. (Adjust cooking time based on your microwave’s power). This step helps to shorten the baking time in the oven.

Now, let’s make the tomato sauce base. Remove the stems from the tomatoes and roughly chop them. Finely chop the onion as well. Heat a little oil in a pan over medium heat, add the chopped onion, and sauté until fragrant. Then, add the chopped tomatoes and cook them together. Use a wooden spoon to mash the tomatoes as they cook. Season with salt and pepper. Add the lemon juice for a bright flavor. If you prefer a sweeter sauce, add 2 tablespoons of stevia or sugar. Continue to simmer for about 5-10 minutes until the sauce thickens.

In a bowl, combine the prepared tomato sauce with the microwaved potatoes. Mix well. You can add some cheese intermittently while mixing to enhance the cheesy flavor. Transfer the mixture into an oven-safe gratin dish.

Generously top the gratin with the remaining cheese. Place the dish in a preheated oven at 180°C (350°F) for about 25-30 minutes, or until the cheese is melted and golden brown.
