  • Ingredient Category : Flour / Wheat
  • Occasion : Snack
  • Cooking : Grilled / Roasted
  • Servings : More than 6 servings
  • Cooking Time : Within 60 minutes
  • Difficulty : Beginner

Ingredients

  • 110g Cake Flour
  • 30g Almond Flour
  • 70g Unsalted Butter, softened
  • 50ml Milk
  • 2 Eggs, room temperature
  • 4g Baking Powder
  • 80g Granulated Sugar
  • 4-5 Oreo Cookies (for batter and topping)
  • 50g Cream Cheese, softened
  • 20g Powdered Sugar

Cooking Instructions

Step 1

First, prepare the Oreo cookies. Separate the cream filling from the cookie part of the Oreos. Place only the cookie parts into a sturdy zip-top bag, ensuring it’s well-sealed to prevent any crumbs from escaping. Then, use a rolling pin to crush the Oreo cookies into small pieces, about 0.5-1 cm in size.

Step 1

Step 2

If you don’t have a rolling pin, you can use the bottom of a strong cup or bowl. Avoid crushing the Oreos into a fine powder; leaving some small chunks will add a nice texture to the muffins. Set the crushed Oreo pieces aside for now.

Step 2

Step 3

In a bowl, place the softened cream cheese. Using a whisk or spatula, cream it until smooth. Once the cream cheese is smooth, add the powdered sugar and mix until well combined and the sugar is dissolved.

Step 3

Step 4

Now, add half of the crushed Oreo pieces to the cream cheese mixture and gently mix them in. This Oreo cream cheese filling should be left at room temperature while you prepare the muffin batter.

Step 4

Step 5

It’s time to make the muffin batter. In another bowl, cream the softened butter until it’s light and fluffy. Once the butter is creamy, add the granulated sugar and mix until you can no longer see the sugar granules.

Step 5

Step 6

Add the eggs one at a time, mixing thoroughly after each addition. Adding all the eggs at once can cause the mixture to separate. So, beat in the first egg until fully incorporated before adding and mixing the second egg. Proper emulsification by whisking well after each addition is key.

Step 6

Step 7

Sift the dry ingredients (cake flour, almond flour, and baking powder) into the butter mixture. Using a spatula, gently fold the ingredients together by making a ’11’ motion, scraping from the bottom of the bowl, just until no dry flour is visible. Be careful not to overmix, as this can result in tough muffins.

Step 7

Step 8

Add the remaining crushed Oreo pieces to the batter and mix lightly until just combined. Again, avoid overmixing.

Step 8

Step 9

Line a muffin tin with paper liners. Fill each liner about two-thirds full with the muffin batter. Avoid overfilling, as the muffins will rise during baking. (Tip: Using paper liners makes it much easier to remove the muffins from the tin after baking).

Step 9

Step 10

Spoon a generous amount of the prepared Oreo cream cheese filling onto the center of each muffin. Then, gently cover the filling with more batter, pressing it down slightly to enclose the filling. (It’s okay if a little filling peeks out).

Step 10

Step 11

Decorate the tops of the muffins with the reserved Oreo cookie pieces. Gently press the Oreo pieces down into the batter so they don’t fall off during baking.

Step 11

Step 12

Bake in a preheated oven at 180°C (350°F) for about 20 minutes, after reducing the temperature to 160°C (320°F). Baking time and temperature may vary depending on your oven. A toothpick inserted into the center should come out clean when they are done.

Step 12

Step 13

Voila! Your warm, moist, and tender cream cheese Oreo muffins are ready. Enjoy them warm for an extra soft and tender experience. They aren’t overly sweet, striking a perfect balance with the rich Oreo flavor and creamy cheese. These make a wonderful treat for parties or a delightful snack. Your friends will surely love them!
