  • 1 Tbsp mirin (or cooking sake)
  • A little bit of chives (or the white part of green onions)
  • A little bit of carrot

Crack the fresh eggs into a bowl. Separate the yolks from the whites, then gently whisk them together with a fork or whisk until smooth. Be careful not to overmix.
