Crab Stick Cold Ramen

Forget ordinary ramen! This Crab Stick Cold Ramen offers a fantastic flavor fusion of the savory ramen broth, the spiciness of Cheongyang chili peppers, and the sweet and sour tang of vinegar. It’s the perfect dish when you have a lack of appetite! A delightful summer treat!
Main Ingredients- Ramen noodles 2 packs
- Imitation crab meat (crab sticks) 1 pack (approx. 80g)
- 1/2 Onion
- 1 Cheongyang chili pepper
- 1/2 Green bell pepper
- 1/3 Cucumber
Cold Ramen Sauce- Ramen soup base 2 packets
- 4 Tbsp Soy sauce
- 4 Tbsp Vinegar
- 4 Tbsp Sugar
- 2 Cups Cold water (approx. 400ml)
- Ice cubes (to taste)

Cooking Instructions
Step 1
First, wash and prepare all the vegetables for the cold ramen. Thinly slice the onion and soak it in cold water for about 5 minutes to remove its pungency, then drain. Remove the seeds from the Cheongyang chili pepper and green bell pepper and slice them thinly. Thinly julienne the cucumber. Shred the imitation crab meat with your hands.
Step 2
The texture of the ramen noodles is important when cooked. Be careful not to break the noodles in half while boiling them. Keeping the noodles intact will make them chewier and more delicious when eaten.
Step 3
Boil 2 cups of water (refer to the water amount indicated on the ramen package) in a pot. Once the water is boiling, add the ramen noodles and the vegetable flakes (garnish). Cook for about 30 seconds to 1 minute longer than the time indicated on the package, then immediately turn off the heat.
Step 4
Drain the cooked noodles in a colander and immediately rinse them thoroughly under cold running water. This step is crucial to achieve a chewy texture. After rinsing, drain the water completely using the colander.
Step 5
Now, let’s make the special cold ramen sauce. In a bowl, combine the 2 ramen soup base packets, 4 Tbsp soy sauce, 4 Tbsp vinegar, 4 Tbsp sugar, and 2 cups of cold water. Stir well until all ingredients are dissolved. Chill the prepared sauce in the freezer or refrigerator until cold.
Step 6
Arrange the chilled noodles attractively in a serving bowl. Top with the prepared vegetables (onion, Cheongyang chili pepper, green bell pepper, cucumber) and the shredded imitation crab meat. For an even colder and more refreshing taste, add ice cubes as desired. Enjoy your refreshing cold ramen!
