Ingredients (for 1-2 servings)- 4 long imitation crab sticks
- 1 bag bean sprouts (approx. 250g)
- 5 stalks chives (about half a handful)
- 1 Tbsp chili oil
- 1.5 Tbsp oyster sauce
- A little katsuobushi (bonito flakes)
Cooking Instructions
Step 1
Prepare the ingredients for the recipe: 4 long imitation crab sticks, 1 bag of bean sprouts (approx. 250g), 5 stalks of chives (about half a handful), 1 tablespoon of chili oil, 1.5 tablespoons of oyster sauce, and a small amount of katsuobushi. (Tip: If you dislike the strong flavor or slight bitterness of chives, feel free to omit them. The amount listed here is less than typically used to ensure a balanced flavor.)
Step 2
Thoroughly wash the bean sprouts under running water. After washing, it’s crucial to drain them completely in a colander. Remaining water can make the stir-fry soggy.
Step 3
Heat 1 tablespoon of chili oil in a pan over medium heat. Tear the imitation crab sticks into bite-sized pieces or cut them into lengths about the size of your thumb. Add them to the pan and lightly stir-fry until they are coated with the aromatic chili oil. This light sautéing is key to infusing them with flavor.
Step 4
Once the crab sticks are coated with chili oil, add the chives, cut to a similar length as the crab sticks, and stir-fry very briefly. Keep the heat at medium and cook for only about 20-30 seconds. This quick sauté helps retain the crisp texture of both ingredients.
Step 5
Now, turn the heat up to high. Add the drained bean sprouts and 1.5 tablespoons of oyster sauce. Stir-fry quickly, ensuring it takes less than a minute to cook. (Tip: For extra-crispy bean sprouts, turn off the heat just as they start to become tender and immediately transfer to a plate – residual heat will continue to cook them. If you prefer softer, wilted bean sprouts, cook them a bit longer until they reach your desired tenderness.) Finally, sprinkle with katsuobushi to taste for an added layer of umami flavor.
