Apple Compote

- 120g Unsalted Butter, room temperature

Cooking Instructions
Step 1
First, let’s prepare the ‘Apple Compote.’ Wash 1.5 apples (about 230g), remove the cores, and chop them into bite-sized pieces. In a pot, combine the chopped apples, 20g of brown sugar, and 1.5g of cinnamon powder. Cook over medium heat, stirring constantly to prevent sticking. Continue cooking until the liquid released by the apples has significantly reduced and the mixture is no longer watery. Turn off the heat. This delicious compote will add wonderful flavor to your muffins!
Step 2
Allow the prepared apple compote to cool slightly, then transfer it to an airtight container and refrigerate. Making this the day before will allow the apples to firm up and develop a wonderfully chewy texture.

Now, let’s make the ‘Cinnamon Crumble.’ In a bowl, place 54g of cold butter. Use a fork or pastry blender to break it down into small pieces. Add 45g of sugar and mix with the butter. Continue to mix until the sugar is fully incorporated and the mixture resembles coarse crumbs. Add the sifted almond flour (38g), cake flour (45g), and cinnamon powder (5g). Use your fingertips to rub the ingredients together until they form a crumbly texture with no large lumps.

If the crumble mixture feels too wet, you can add a little more almond flour to achieve a slightly looser, crumbly consistency that easily separates. Place the finished crumble in the refrigerator to chill while you prepare the muffin batter.
Step 5
It’s time to make the ‘Muffin Batter.’ About an hour before you begin baking, take 120g of butter, 3 eggs, and 40g of milk out of the refrigerator so they reach room temperature. In a large bowl, cream the room-temperature butter until smooth. Add 60g of sugar and a pinch of salt, and beat until the mixture is light and fluffy, and the sugar is mostly dissolved (this is called creaming the butter). You’ll notice the color lighten to an ivory hue.

Gradually add the room-temperature eggs, one at a time, beating well after each addition to ensure the batter doesn’t curdle. Next, sift together 140g of cake flour and 5g of baking powder directly into the bowl. Add 3g of vanilla extract. Gently fold these dry ingredients into the wet mixture until just combined – be careful not to overmix. Finally, stir in the room-temperature milk until you have a smooth, uniform batter.
Step 7
Now, let’s assemble the muffins! Line your muffin tin with paper liners and fill each cup about two-thirds full with the batter. Spoon a generous amount of the chilled apple compote onto the center of the batter in each cup. Adding more compote will give you more delightful apple bites within the muffin!
Step 8
Finally, generously sprinkle the chilled cinnamon crumble topping over the batter and apple compote. Place the assembled muffins into a preheated oven at 180°C (350°F) and bake for approximately 25 minutes, or until a toothpick inserted into the center comes out clean.
