Here’s a recipe for delicious curry that anyone can easily make using leftover vegetables from the fridge, along with any remaining meat or ham. It’s perfect for a satisfying and nutritious meal on busy days!

  • 1 packet (100g) store-bought curry powder mix
  • 150g pork tenderloin
  • 1 medium potato
  • 1.5 onions
  • 0.5 carrot
  • 1 Tbsp minced garlic
  • 1 Tbsp cooking oil
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

1. Prepare the vegetables that form the base of your curry. Peel the potato and cut it into 2cm cubes. Soak the cubes in cold water for about 10 minutes to remove excess starch. This step helps to create a clear and clean-tasting curry. Dice the carrot and onion into similar-sized cubes, about 2cm.

2. Cut the pork tenderloin into bite-sized pieces, about 2cm. Place them in a bowl, add 1 tablespoon of minced garlic and a pinch of black pepper. Gently mix everything together to marinate the pork. Marinating beforehand will make the meat more tender and flavorful.

3. Heat 1 tablespoon of cooking oil in a pot over medium heat. Add the marinated pork and sauté until the surface turns white. Once the pork is partially cooked, add the diced onion, carrot, and potato. Sprinkle a pinch of salt and continue to stir-fry for about 1 minute to enhance the vegetables’ aroma.

4. Pour in 700ml of water and bring it to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and simmer until the potatoes are completely tender. Stir occasionally to prevent sticking to the bottom of the pot.

5. When the potatoes are fully cooked, lower the heat to low. Add the curry powder mix (1 packet) and stir with a wooden spatula, ensuring there are no lumps, for about 1-2 minutes until the curry thickens. Your delicious homemade curry is now ready! Serve generously over hot steamed rice and enjoy.
