Ingredients- 100g Almond Flour
- 100g Oat Flour
- 100g Unsalted Butter, softened at room temperature for at least 3 hours
- 3 Eggs, at room temperature
- 70g Sugar (granulated or brown)
- 1 Apple, fresh
- 3g Ground Ginger
- 5g Ground Cinnamon
- Lemon zest or a few drops of lemon oil for freshness
- 1g Salt

Step 1
Ensure your butter is properly softened by leaving it at room temperature for at least 3 hours until it’s pliable. In a large mixing bowl, combine the softened butter, room-temperature eggs, almond flour, oat flour, sugar, ground ginger, ground cinnamon, lemon zest (or oil), and salt. For a smoother cake texture, consider sifting the dry ingredients before adding them to the bowl.

Using a hand mixer, beat the ingredients together until a smooth, creamy batter forms. Make sure to scrape down the sides of the bowl periodically to ensure everything is evenly incorporated and to avoid any lumps.

Wash the apple thoroughly, then peel it. Slice the apple thinly, aiming for a thickness of about 0.5 cm. Thin slices will bake more evenly and integrate beautifully into the cake.
