The combination of zucchini, which my husband loves, and the juicy shrimp I adore, creates a delightful culinary experience. Instead of going out, let’s create happy memories at home with this special, homemade dish.
Main Ingredients
- 1 zucchini
- 5 Easy Peel Frozen Shrimp (Argentinian Natural)
- 1/2 avocado
- A little flour (for coating)
- 1 handful of sprouts
- A little pineapple
Special Sauce
- 1 teaspoon minced garlic
- 5 tablespoons olive oil
- 1/2 tablespoon organic apple cider vinegar
- 2 teaspoons plum extract (maesil cheong)
- 1 tablespoon whole grain mustard
- 2 tablespoons chopped onion
- 1 teaspoon minced garlic
- 5 tablespoons olive oil
- 1/2 tablespoon organic apple cider vinegar
- 2 teaspoons plum extract (maesil cheong)
- 1 tablespoon whole grain mustard
- 2 tablespoons chopped onion
Cooking Instructions
Step 1
Thaw the frozen shrimp either at room temperature or in cold water. Once thawed, peel the shrimp, leaving only the tail attached. In a bowl, combine the shrimp with a pinch of black pepper, 1 teaspoon of cooking wine (or a few drops of vinegar), and plum extract. Marinate for 5-10 minutes at room temperature. This step helps remove any fishy odor and makes the shrimp more tender.
Step 2
Wash the zucchini and pat it dry. Using a mandoline slicer, carefully cut the zucchini into thin, flat slices, about 0.2cm thick. *Safety first! When using a mandoline, wear protective gloves and slice slowly and cautiously to avoid cuts. If you’re not comfortable with a mandoline, you can also use a knife to slice it thinly. Slightly thicker slices are also acceptable.
Step 3
Sprinkle salt evenly over the zucchini slices. Aim for a light sprinkle, like a chef would do – too much salt can make it too salty! Just a gentle dusting is perfect.
Step 4
Let the salted zucchini slices sit for 10-15 minutes. They will wilt slightly as the moisture is drawn out, making them pliable and easier to roll. After wilting, quickly rinse the zucchini under cold water to remove excess salt, and then pat them thoroughly dry with paper towels.
Step 5
Lightly coat the dried zucchini slices with flour. You can do this by gently patting flour onto each slice or by placing the zucchini and flour in a plastic bag and shaking. This flour coating will help the zucchini and shrimp stick together and achieve a crispier texture when cooked.
Step 6
Now it’s time to wrap the shrimp with zucchini. Place a marinated shrimp onto a floured zucchini slice and roll it up tightly, similar to making a sushi roll.
Step 7
Gently shape the zucchini to ensure it completely encases the shrimp. Secure the roll by piercing it through the seam with a bamboo skewer. This will prevent the roll from unraveling during cooking and keep its shape neat.
Step 8
Heat a generous amount of avocado oil (or olive oil) in a skillet over medium heat. Once the oil is shimmering, carefully place the zucchini-wrapped shrimp rolls into the pan. *Be mindful of the skewer length. Ensure the skewers don’t interfere with even cooking or flipping. Using shorter skewers or adjusting their position on the pan can help achieve uniform browning.
Step 9
Sear the rolls over medium heat until golden brown and crispy, like you’re deep-frying them. Then, reduce the heat to low to ensure the shrimp cooks through without burning the zucchini. Using tongs or a cooking fork, flip the rolls frequently to achieve an even, appetizing golden-brown color on all sides.
Step 10
While the rolls are cooking, prepare the sauce. In a small bowl, combine the minced garlic, olive oil, apple cider vinegar, plum extract, whole grain mustard, and chopped onion. Whisk everything together until well combined. # Taste the sauce and adjust seasonings to your preference. You can add a touch of honey, lemon juice, or more mustard if desired. # Feel free to use any other favorite sauce you have on hand.
Step 11
And there you have it! Arrange the beautifully crisp zucchini shrimp rolls on a serving plate. Garnish with fresh sprouts, slices of creamy avocado, and a few pieces of refreshing pineapple. Serve with the delicious sauce you prepared, and enjoy this impressive dish that will make your special occasion even more memorable and enjoyable!
