I love corn salad, and my husband loves coleslaw, so I decided to combine them into one delightful dish! All you need is cabbage and canned corn, and you can use whatever other ingredients you have in your fridge to make this simple yet delicious ‘Corn Coleslaw’. It’s a quick and tasty recipe that’s perfect for a light meal or a delightful side dish.

Ingredients
  • 1/2 can canned corn, drained
  • 100g cabbage
  • 1/6 small carrot
  • Mayonnaise (to taste)
  • 2 Tbsp white vinegar
  • 1 Tbsp sugar
  • 1 tsp mustard
  • Pinch of black pepper

Cooking Instructions

Step 1

After chopping the cabbage, it often seems like a lot! Although it says 100g, you can start by cutting it into about 1-2 cm thick pieces, then finely chopping it. Don’t worry too much about the exact amount, as you can always adjust the mayonnaise and mustard to taste later on.

Step 2

Place the finely chopped cabbage in a bowl and soak it briefly in water with 1 tablespoon of vinegar. This helps to maintain its crispness and remove any slight bitterness.

Step 3

Drain the cabbage lightly and transfer it to another bowl. Finely dice or julienne the carrot and add it to the bowl. The carrot is mainly for color, but if you have bell peppers, they would be a wonderful addition for extra flavor and visual appeal.

Step 4

Open the can of corn, drain it thoroughly, and add about half a can to the vegetables. Start by adding 2 tablespoons of mayonnaise. You can always add more later to achieve your desired creaminess.

Step 5

Add the remaining 1 tablespoon of vinegar and 1 teaspoon of mustard. The mustard adds a tangy kick that balances the richness of the mayonnaise.

Step 6

Finally, add 1 tablespoon of sugar and a pinch of black pepper. Mix everything together thoroughly with a spoon or spatula until well combined. Give it a good ‘shake shake’!

Step 7

Taste the mixture and adjust the seasonings according to your preference. If you prefer a stronger tangy flavor, add more mustard. If you like it creamier, add more mayonnaise. For the best flavor, chill it in the refrigerator for at least 30 minutes before serving.
