  • 1 packet of store-bought naengmyeon (cold noodle) broth (approx. 500ml)
  • 1 serving of somyeon (thin wheat noodles)
  • 2 boiled eggs (for garnish)

Broth Seasoning

  • 2 Tbsp sugar
  • 2 Tbsp vinegar
  • 1 Tbsp soy sauce
  • 1 tsp mustard powder (adjust to taste)

Prepare your delicious yeolmu kimchi. Kimchi that is not too spicy and well-fermented is best for making noodle broth.

In a bowl, combine about 400ml of the yeolmu kimchi juice with the entire packet of naengmyeon broth. Adjust the amount of kimchi juice based on its saltiness and your preference.

Add the seasoning ingredients for the broth: 2 Tbsp sugar, 2 Tbsp vinegar, 1 Tbsp soy sauce, and 1 tsp mustard powder. Mix well. Mustard adds a pleasant kick, so feel free to reduce or omit it if you prefer. Taste the broth and add a tiny pinch of salt if needed to reach your desired flavor balance.

Add the chopped yeolmu kimchi to the prepared seasoned broth and mix everything together. For an extra refreshing experience, add plenty of ice cubes. This will make the broth even cooler and more flavorful.

Cook the somyeon noodles in boiling water. When the water comes to a rolling boil and looks like it might overflow, add about 1 cup of cold water.
