Cooking Instructions

Step 1

First, let’s prepare the seasoning for our refreshing Yeolmu Kimchi Noodles! In a large bowl or container with a lid, combine 3 tablespoons of sugar for sweetness and 1 cup (about 200ml) of cold water.

Step 2

Microwave the mixture for about 30 seconds to help the sugar dissolve completely. This is a quick and easy way to ensure the sugar melts smoothly.

Step 3

Once the sugar has dissolved, add 1 tablespoon of gochugaru for a gentle heat, 1 tablespoon of vinegar for tanginess, and 1 tablespoon of plum extract for added sweetness and flavor. Pour in 1 1/4 cups (300ml) of the yeolmu kimchi juice. Whisk everything together with a whisk or spoon until well combined.

Step 4

Now it’s time to prepare the star ingredient: the yeolmu kimchi! Roughly chop the well-fermented, flavorful yeolmu kimchi into bite-sized pieces and add it to the prepared container. If the stems are too long, cutting them into 2-3 pieces with scissors will make them easier to eat.

Adjusting the seasoning of the broth is crucial. Since the saltiness of yeolmu kimchi can vary between households, taste the broth and add a small amount of sea salt if needed. Aim for a balanced flavor that’s not too salty but has a good savory depth. Once seasoned, cover the container tightly and place it in the freezer for a short while to make it thoroughly chilled. This step ensures your noodles will be extra refreshing.

Step 6

While the yeolmu kimchi broth is chilling, let’s boil the eggs for the topping. Place the eggs in a pot of cold water and bring it to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 25 minutes for hard-boiled eggs. After boiling, plunge the eggs into cold water to cool them; this makes peeling much easier.

Step 7

Time to cook the noodles! Bring a large pot of water to a rolling boil and add 10.6 oz (300g) of somyeon or jungmyeon. Stir occasionally to prevent the noodles from sticking together, and cook according to the package directions, usually about 3-4 minutes for perfectly al dente noodles.

Step 8

Drain the cooked noodles in a colander and rinse them thoroughly under cold running water, rubbing gently. Rinsing makes the noodles springy and removes excess starch, preventing them from becoming mushy. Drain them well and place them in your serving bowl. Ladle the ice-cold yeolmu kimchi broth generously over the noodles.

Step 9

For an extra frosty experience, add about 30 ice cubes to your bowl. The sight of the broth with floating ice chips is incredibly refreshing!
