Cooking Delicious Rice from Stale Rice for a Glossy Finish

You bought what you thought was freshly harvested rice, only to realize it was old rice and you ended up eating it for over a month! The older the rice, the worse its condition seemed to get. So, I experimented with adding various ingredients to make stale rice taste like fresh rice, and I managed to get it surprisingly close! The only downside is that the color doesn’t quite achieve that fresh-rice sheen, no matter how hard I try. Still, I’m satisfied with the taste, considering it’s the best possible outcome and I think it’s excellent. This method allowed me to finish all the stale rice – which is a bit sad now! Cooking Instructions

Step 1

First, prepare your stale rice. Since stale rice can have a lower moisture content than fresh rice, it’s best to adjust the quantity based on its condition. Gently rinse the rice several times until the water runs clear. Be careful not to rub too hard, as this can break the rice grains.

Step 2

After rinsing, drain the rice in a sieve and let it soak for at least 30 minutes to 1 hour. Stale rice may require a longer soaking time to absorb moisture. While it soaks, you’ll notice the rice grains becoming plump as they absorb water.

Step 3

Transfer the soaked rice to your rice cooker and add water. The amount of water should be adjusted based on the condition of the stale rice. You might want to add a little more water than you normally would for fresh rice, or stick to your usual ratio. Add 2 tablespoons of Cheongju and 1 tablespoon of grapeseed oil to the rice and mix gently. Cheongju and grapeseed oil help to neutralize any musty odors from the stale rice, enhance the flavor, and add a nice sheen to the cooked rice.

Step 4

Press the cooking button on your rice cooker to start cooking the rice. You can use the quick rice or regular white rice setting. As the rice cooks, you’ll notice the subtle aroma of Cheongju and grapeseed oil, working their magic to transform the stale rice into delicious rice that tastes like freshly harvested rice.

Step 5

Once the cooking cycle is complete, let the rice sit in the cooker with the lid on for about 5 minutes to steam. Then, gently fluff the rice with a rice paddle, lifting from the bottom to avoid mashing the grains. Your delicious stale rice, now with a lovely sheen and tasting remarkably like fresh rice, is ready! Serve it in bowls and enjoy your meal.
