Main Ingredients
- 1 block (approx. 300g) silken tofu
- 200g fresh radish (daikon)
- 1/3 medium onion
- 2 fresh eggs
Seasoning & Broth
- 2 Tbsp perilla oil
- 1 Tbsp minced garlic
- 5 cups (approx. 600ml) dashi broth or water
- 1 Tbsp salted fermented shrimp (saeujeot)
- 1 Tbsp tuna extract (fish sauce alternative)
- 1 Tbsp chopped green onion
- 1 green chili pepper (optional)
- 2 Tbsp perilla oil
- 1 Tbsp minced garlic
- 5 cups (approx. 600ml) dashi broth or water
- 1 Tbsp salted fermented shrimp (saeujeot)
- 1 Tbsp tuna extract (fish sauce alternative)

Cooking Instructions
Step 1
First, prepare the vegetables: thinly slice the radish into bite-sized pieces (about 0.5cm thick). Slice the onion to a similar size as the radish. Finely chop the green onion and green chili pepper for garnish.

Take the block of tofu and gently mash it with a fork or your hands. Aim for a texture where there are still some small chunks of tofu, which adds a nice contrast to the soup. Now that all the ingredients are ready, let’s start cooking!
Step 3
Heat a pot over medium heat and add 2 tablespoons of perilla oil. Add the minced garlic and sliced radish. Sauté for about 1 minute until the radish starts to soften and release its natural sweetness.

Once the radish has sautéed for a minute, add the mashed tofu and sliced onion to the pot. Continue to stir-fry for another 2 minutes, allowing the flavors to meld together.
Step 5
Pour in 5 cups (approximately 600ml) of dashi broth or water. Bring the soup to a gentle boil over medium heat, then cover and simmer for about 10 minutes. This simmering time allows the radish to become tender and the broth to develop a clean, refreshing flavor.
Step 6
While the soup is simmering, prepare the eggs. For an extra silky texture, you can strain the beaten eggs through a fine-mesh sieve once or twice. This removes any uneven parts and ensures a smooth consistency. If you prefer, you can simply whisk the eggs well and use them as is.

After 10 minutes of simmering, season the soup with 1 tablespoon of salted fermented shrimp and 1 tablespoon of tuna extract. Taste and adjust the seasoning as needed. Once seasoned, slowly drizzle the beaten egg into the simmering soup in a thin stream, allowing it to cook gently. Finally, add the chopped green onion and green chili pepper. Bring the soup back to a gentle simmer for just a moment, then turn off the heat immediately. Avoid overcooking after adding the egg.
