Main Ingredients

  • 1 cube of concentrated stock (coin stock)
  • 2 medium potatoes
  • 1/2 bunch chives
  • 1 large green onion (scallion)
  • 2 eggs
  • 1 pack enoki mushrooms

Cooking Instructions

Step 1

First, pour 500ml of water into a pot and add 1 cube of concentrated stock. Bring to a simmer over medium heat until the stock cube is completely dissolved, creating a clear broth. If you don’t have coin stock, you can also use anchovy-kelp broth.

Peel the potatoes and cut them into bite-sized pieces, about 1.5cm thick. Add the cut potatoes to the simmering broth and cook until they are tender when pierced with a fork. Cooking the potatoes thoroughly will enhance the soup’s flavor.

When the potatoes are about two-thirds cooked, add the chives (washed and cut into 4-5cm lengths) and the chopped green onion. Cook together for a short while. Avoid overcooking the vegetables, as they can become mushy. Add them when the potatoes are nearly tender.

In a separate bowl, crack the 2 eggs and whisk them gently with chopsticks to create an egg mixture. Slowly drizzle the beaten egg into the simmering soup in a circular motion. Gently stir to create beautiful wisps of cooked egg.

Finally, add the enoki mushrooms (trim off the ends) and season with 1 tablespoon of soy sauce for soup. Enoki mushrooms cook very quickly, so simmer for just another minute after adding them before turning off the heat. You can also add salt to adjust the taste according to your preference. Enjoy this warm soup with a bowl of rice!
