I made rolled omelets today after a long time! I chopped up some bell peppers from the fridge and made these. Rolled omelets are so delicious when you haven’t had them in a while. This recipe uses a handy chopper to make preparing vegetables a breeze, perfect for when your wrists or arms are feeling tired.

If chopping vegetables is difficult due to arm or shoulder pain, a food chopper is a lifesaver! Cut the bell peppers into manageable pieces and place them in the chopper. Finely mince them. This tool is also incredibly useful for preparing vegetables for fried rice.

You can easily prepare vegetables for fried rice by using a food chopper, making the cooking process much quicker.

In a large bowl, crack the eggs. Add the finely minced bell peppers and 1/2 teaspoon of salt. Instead of whisking the eggs separately, you can simply add the vegetables and eggs to the chopper and press a few times. This will create a smooth and beautifully blended egg mixture, and it also means fewer dishes to wash!

Heat a non-stick pan over low heat. Add a little cooking oil, then use a paper towel to spread a thin, even layer across the entire surface. This prevents the egg from sticking. Pour a thin layer of the egg mixture into the prepared pan.

As the egg begins to set, carefully roll it up from one end. Pour a little more egg mixture into the empty space in the pan, and then continue rolling the omelet, incorporating the new egg. Repeat this process, pouring and rolling, until all the egg mixture is used. This layering builds up a thick and attractive rolled omelet.

Once the rolled omelet is fully cooked, carefully remove it from the pan and let it cool completely. Slicing it while hot can cause the shape to lose its definition. Allowing it to cool ensures clean, beautiful slices.
