  • 2 Tbsp finely minced purple onion

  • 0.5 Tbsp tuna extract (or 2 pinches of salt)
  • 1 Tbsp cooking wine (optional, to prevent egg smell)
  • 2 pinches black pepper
  • Cooking oil (e.g., grapeseed oil)

Cooking Instructions

Step 1

Before we start making this delicious rolled omelet, let’s briefly touch upon the nutritional benefits of eggs. Eggs are considered a ‘complete food’ due to their rich nutrient profile. The yolk is packed with vitamins and minerals, while the whites are an excellent source of protein. One egg can provide about 6g of protein, contributing significantly to your daily recommended intake (around 56g for adult men). With approximately 80 kcal per egg, consuming one or two a day can offer substantial nutrition and satiety.

Step 1

Step 2

Now, let’s dive into making our delicious vegetable rolled omelet! First, finely mince the ham, purple onion, carrot, and Korean chili peppers. These vegetables will add color and texture to our omelet. Ensuring they are finely chopped will help them mix well with the egg mixture and create a beautifully shaped roll.

Step 2

Step 3

Crack 5 eggs into a bowl and whisk them thoroughly with a whisk until well combined. Add all the prepared minced vegetables (carrot, Korean chili pepper, purple onion) and minced ham to the bowl. For seasoning, add 0.5 Tbsp of tuna extract. (If you find tuna extract too salty, adjust the seasoning with about 2 pinches of salt.) Stir everything together until well blended. This is your egg mixture.

Step 3

Step 4

For those sensitive to the smell of eggs, adding 1 Tbsp of cooking wine can help mask any ‘eggy’ aroma and enhance the flavor. (You can omit this if you don’t have cooking wine.) Finally, add 2 pinches of black pepper for a fragrant touch. Mix everything once more to ensure the egg mixture is evenly seasoned.

Step 4

Step 5

It’s time to roll the omelet! Heat a non-stick pan over medium-high heat. Lightly coat the pan with cooking oil and then wipe it with a paper towel. This prevents the egg from sticking and ensures even cooking. Pour a thin layer of the egg mixture into the heated pan, reducing the heat to low. Swirl the pan gently to spread the egg mixture evenly. When the egg is about 60-70% cooked, use chopsticks or a spatula to carefully start rolling it from one end. (I made a few mistakes due to unfamiliarity with the new camera, but try to roll it carefully!) After rolling a portion, push it to one side of the pan, pour more egg mixture into the empty space, and continue rolling. Repeat this process to create a thick and beautifully shaped omelet.

Step 5

Step 6

As you finish rolling, tilt the pan slightly and hold the omelet upright to ensure the sides cook through evenly. This step helps cook the inside thoroughly while maintaining a neat shape. Once the omelet is fully cooked, let it cool slightly before slicing. This prevents the layers from falling apart and keeps the shape intact.

Step 6

Step 7

Once slightly cooled, slice the rolled omelet into bite-sized pieces and arrange them neatly on a plate. Your delicious vegetable rolled omelet is ready! It’s perfect as a side dish for children or as a lunchbox addition. For an extra touch of flavor, you can drizzle a little ketchup on top for a sweet and tangy kick.

Step 7

Step 8

The vegetable rolled omelet is a highly nutritious and versatile side dish that’s easy to make frequently for a healthy meal. While I used tuna extract, cooking wine, and pepper for seasoning, you can experiment with other seasonings like salted fermented shrimp (saeujeot) or soy sauce for a different flavor profile. With its hearty filling of vegetables and the tender texture of the egg, this omelet is not only nutritious but also visually appealing. It’s the kind of dish that disappears quickly from the table! Adding ingredients like mentaiko (spicy cod roe), bacon, or ham can elevate its flavor even further. It also makes a fantastic accompaniment to a cold beer on a hot day!
