Main Ingredients

  • Carrots: 50g (julienned thinly)
  • Boiled Burdock Root: 50g (sliced thinly and quartered)
  • Dried Shiitake Mushrooms: 4 pcs (stems removed, thinly sliced)
  • Fresh Green Beans: 10 pcs (cut in half lengthwise)
  • Egg: 1 pc
  • Warm Cooked Rice: 2 bowls
  • Vegetable Oil: 1 Tbsp

Sushi Vinegar (Sushi-zu)

  • Rice Vinegar: 2 Tbsp
  • Sugar: 1 Tbsp
  • Salt: a pinch
  • Lemon Juice: a little (optional, for added freshness)

Vegetable Simmering Sauce

  • Dashi Broth (Kombu stock): 100ml (Steep 1 piece of kombu in cold water for 10 minutes)
  • Soy Sauce: 2 Tbsp
  • Sake (or Mirin): 2 Tbsp
  • Sugar: 1 Tbsp
  • Mirin (Sweet Rice Wine): 1 Tbsp

Cooking Instructions

First, let’s prepare the dashi broth, which is the foundation of delicious sushi. Steep 1 piece of kombu (about 5x5cm) in 100ml of cold water for about 10 minutes, then remove the kombu. This will add a deep umami flavor.

Now, it’s time to prepare the vegetables. Wash the carrots and julienne them thinly. If you have pre-boiled burdock root, slice it thinly and cut into quarters. Remove the stems from dried shiitake mushrooms, rehydrate them, and slice thinly. Cut the fresh green beans in half lengthwise.

Let’s skillfully simmer the prepared vegetables. In a frying pan, combine the carrots, burdock root, and shiitake mushrooms. Pour in all the simmering sauce ingredients (100ml dashi broth, 2 Tbsp soy sauce, 2 Tbsp sake, 1 Tbsp sugar, 1 Tbsp mirin). Bring to a boil over medium heat, then reduce to low heat and simmer until the vegetables are tender and the sauce has reduced to a glaze. Stir occasionally.

Let’s make the delicious sushi rice! Place 2 bowls of warm cooked rice in a large bowl. Add the sushi vinegar ingredients (1 Tbsp sugar, 2 Tbsp rice vinegar, a pinch of salt, a little lemon juice) and gently mix with a rice paddle or spatula, being careful not to mash the rice grains. It’s important to mix it so the grains remain distinct and fluffy.

Top the prepared sushi rice with the simmered vegetables. The sweet and savory flavor of the vegetables will blend with the sushi rice, enhancing the overall taste. Gently mix with the spatula to ensure the seasoning is evenly distributed.

Finally, let’s prepare the garnish. Whisk the egg well. Lightly oil a frying pan and cook a thin omelet over low heat. Once cooked, let it cool slightly, then slice it into thin strips. The colorful strips will add visual appeal.

Now it’s time to plate everything beautifully! Arrange the blanched green beans attractively on top of the sushi rice in a serving bowl. Pile the thinly sliced egg omelet over the green beans.
