  • 150g glass noodles
  • 1/2 red onion
  • 1/2 white onion
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1 green bell pepper

Seasoning

  • 2 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 tsp sesame oil
  • 1 tsp sesame seeds

Cooking Instructions

Step 1

Prepare the glass noodles. Soak them in warm water for about 10 minutes until softened. This step ensures they become wonderfully chewy and tender when cooked.

Thinly julienne all your vegetables. Slicing the onions thinly will help them caramelize and sweeten beautifully when stir-fried.

Once the glass noodles are softened, blanch them in boiling water for about 1 minute. Be careful not to overcook them, as they can become mushy and lose their delightful texture.

Drain the blanched noodles and rinse them quickly under cold running water. This shock in cold water helps to stop the cooking process and keeps the noodles from sticking together, maintaining their springy texture.

Heat a little cooking oil in a wide, shallow pan over medium heat. Add the sliced onions first and stir-fry until they become translucent and fragrant. This process brings out their natural sweetness.

Once the onions are softened, add the julienned bell peppers and green pepper to the pan. Continue to stir-fry until the vegetables are just tender-crisp, retaining a slight bite for a pleasant texture.

Remove the stir-fried vegetables from the pan and set them aside. Now, create the sauce. In the same pan, combine the soy sauce and sugar. Cook over low heat until the sugar has dissolved, forming a flavorful sauce.

When the sauce is gently simmering, add the blanched glass noodles to the pan. Stir and toss continuously with a spatula to ensure the noodles are evenly coated with the delicious sauce.
