For White Radish Cake

  • 200g white radish
  • 100ml water
  • 5 Tbsp potato starch
  • 4 Tbsp all-purpose flour
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 2 Tbsp cooking oil

  • 4 Tbsp all-purpose flour

  • 2 Tbsp cooking oil

For Red Radish Cake

  • 200g red radish
  • 100ml water
  • 5 Tbsp potato starch
  • 4 Tbsp all-purpose flour
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 2 Tbsp cooking oil

Cooking Instructions

Prepare tri-color radishes in beautiful, vibrant hues. Peel and dice the white, red, and purple radishes into approximately 1.5 cm cubes, weighing 200g each. This size makes them easy to blend later and helps maintain their shape in the cakes.

Place the cubed radishes of each color into a blender with 100ml of water and blend until smooth. Pass the blended radish mixture through a fine-mesh sieve to extract the clear juice. This step ensures a softer texture for the cakes.

To each strained radish juice, add 5 Tbsp potato starch, 4 Tbsp all-purpose flour, 1/2 tsp sugar, and 1/4 tsp salt. Mix well until there are no lumps. The batter should have a pourable consistency, not too thick or too thin. (If it’s too stiff, add a little more water).

Heat 2 Tbsp of cooking oil in a non-stick pan over medium-low heat. Ladle about 1/4 cup of batter per cake into the pan. Cook until golden brown on both sides, flipping gently. Cooking over low heat ensures they are cooked through without burning. Transfer the cooked radish cakes to a paper towel-lined plate to drain excess oil.
