If you have some delicious namul left over from a festive holiday meal, why not transform it into a wonderful bibimbap? Especially this year, with spinach being so expensive, the flavor of this three-color namul bibimbap feels even more special. Using your leftover vegetables, a bit of bean sprouts, and only half the usual amount of rice, you’ll find yourself feeling full and satisfied with amazing taste. It’s a great way to clear out your fridge and a clever method for utilizing holiday leftovers.
Main Ingredients- 1/2 bowl of rice
- Bellflower root namul (leftover)
- Fiddlehead fern namul (leftover)
- Spinach namul (leftover)
- A little bit of bean sprouts (optional)
- 1 egg
Seasoning- 0.7 Tbsp gochujang (Korean chili paste)
- 1 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, cut the prepared namul into bite-sized pieces. If you’re using bean sprouts, trim them at this stage as well. Bean sprouts add freshness to the bibimbap, but the dish is still delicious without them.
Step 2
Now it’s time to assemble your delicious bibimbap. Place the warm rice attractively in a large bowl. Artfully arrange the bellflower root, fiddlehead fern, and spinach namul on top, considering the color harmony. Finally, add the prepared bean sprouts for an even more abundant and fresh look. If you have a nicely fried sunny-side-up egg, placing it in the center will make this three-color namul bibimbap look and taste even better. It’s a complete and satisfying meal.
Step 3
You can cook the fried egg to your preference, but I personally prefer it sunny-side-up with a slightly runny yolk. I like to cook just the whites until set and then break the yolk when mixing everything together, allowing its richness to blend in. This way, the flavors of each ingredient meld beautifully for a more delicious experience.
