I had a lot of ingredients in my fridge, so I put them all together and it turned out incredibly delicious! This recipe is perfect for using up leftover vegetables and meats.

Fried Rice Ingredients

  • 2 bowls of cooked rice (warm)
  • 2 eggs
  • 1/4 onion (finely diced)
  • Small amount of carrot (finely diced)
  • 1 sheet of pickled radish (danmuji, finely diced)
  • Ham, as desired (diced)
  • Sausage, as desired (diced)
  • Small amount of cooking oil (for greasing the pan)
  • 2 Tbsp perilla oil (deulgireum)
  • 2 Tbsp soy sauce
  • 1/3 Tbsp salt
  • Ketchup (for garnish)
  • Mustard sauce (for garnish)

Stir-fried Kimchi Ingredients

  • 1 Tbsp sugar
  • 1 Tbsp perilla oil (deulgireum)
  • 1/2 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

First, prepare the key vegetables for the fried rice: finely dice the onion, carrot, and pickled radish (danmuji) for a crunchy texture. The amount of vegetables can be adjusted to your preference, so feel free to use other vegetables you have in your fridge!

Next, dice the ham and sausage into bite-sized pieces. Cutting them into similar sizes will ensure they cook evenly and blend well with the other ingredients.

Now, let’s start making the fried rice! Lightly grease a pan with cooking oil. Add the diced onion, carrot, and danmuji, and stir-fry over medium heat until the vegetables become slightly golden and fragrant, releasing their natural sweetness.

Once the vegetables look translucent and are starting to turn lightly golden, add the diced ham and sausage. Continue to stir-fry everything together until the ham and sausage are nicely browned and have rendered some of their savory juices, which will meld with the vegetables.

When all the ingredients are nicely sautéed, turn off the heat temporarily. Add the flavor enhancers: 2 Tbsp of perilla oil, 2 Tbsp of soy sauce, and 1/3 Tbsp of salt. Mix well with the ingredients. (Turning off the heat before adding soy sauce helps prevent it from burning.)

It’s time to make the fluffy scrambled eggs. Lightly beat the 2 eggs in a bowl. Pour the beaten eggs into the pan and reduce the heat to low. Let the eggs set slightly before scrambling.

Once the eggs are about halfway cooked, gently break them up with chopsticks or a spatula to create soft scrambled pieces. Then, mix the scrambled eggs with the rice in the pan. It’s important to stir everything together evenly so that each grain of rice is coated with the egg.

When all the ingredients are well combined and the rice is loose and has a nice yellow hue from the egg, your fried rice is almost ready! Pack the fried rice firmly into a rice bowl to shape it. Pressing down will help it hold its shape when you invert it onto a plate.

Next, let’s make a simple stir-fried kimchi to accompany the fried rice. In a bowl, combine your desired amount of kimchi (you can chop it if it’s large) with 1 Tbsp of sugar, 1 Tbsp of perilla oil, and 1/2 Tbsp of red pepper flakes. Mix well and then stir-fry in a pan over medium heat until the kimchi is tender and has a lovely color. It should look nice and slightly caramelized.

Carefully invert the filled rice bowl onto a serving plate. Top generously with the stir-fried kimchi. Finally, drizzle lines of ketchup and mustard sauce over the top for a colorful and delicious presentation. Your vibrant fried rice is now complete!

You can also easily make simple rice balls (onigiri) with the leftover fried rice. They make a great snack for kids or a convenient addition to lunchboxes!
