Colorful Potato and Vegetable Stir-Fry
A Delicious Side Dish of Butter-Fried Potatoes and Vegetables That Everyone, From Children to Adults, Will Love
As children attend daycare and kindergarten, many parents worry about their picky eating habits, especially their reluctance to eat vegetables. So, we tried stir-frying potatoes and vegetables with butter, and it turned out wonderfully savory and delicious! ^^ This recipe is perfect for busy parents looking for a healthy and appealing side dish.
Main Ingredients- 1 potato
- 1/2 onion
- A pinch of carrot
- A pinch of red bell pepper
- A pinch of yellow bell pepper
Cooking Instructions
Step 1
Wash all the vegetables (potato, onion, carrot, red bell pepper, yellow bell pepper) thoroughly. Then, slice them into thin julienne strips, about 0.5cm thick. If you soak the julienned potatoes in water right after cutting, it will help remove excess starch, preventing them from sticking together when stir-fried and resulting in a cleaner texture.
Step 2
Lightly coat a heated pan with perilla oil. Begin by stir-frying the julienned potatoes. Cook over medium-low heat to prevent them from burning. Add a tiny pinch of salt at this stage to lightly season the potatoes, enhancing their flavor.
Step 3
Once the potatoes start to turn translucent and are partially cooked, add the julienned carrots and onions. Continue to stir-fry until the carrots and onions soften.
Step 4
Now it’s time to add the colorful bell peppers. Since bell peppers can become mushy if overcooked, it’s best to stir-fry them only briefly with the other vegetables to maintain their crispness. As bell peppers can also be eaten raw, add them at the very end and cook for a short time.
Step 5
When all the vegetables are stir-fried, reduce the heat to low or turn it off briefly. Add the 20g of butter. The butter will melt slowly and meld with the vegetables.
Step 6
Once the butter has completely melted and is well combined with the vegetables, turn off the heat. The rich, buttery aroma combined with the natural sweetness of the vegetables creates a wonderfully delicious dish. The vibrant colors will capture the attention of children, making it a dish that even picky eaters will enjoy without hesitation.
Step 7
Transfer the finished potato and vegetable stir-fry to a nice serving plate. Finish by sprinkling some sesame seeds on top. How about serving this ‘Colorful Potato and Vegetable Stir-Fry’ as a delightful side dish for your child today? 😊
