Ingredients- 4 bell peppers (orange or yellow)
- 3 fresh eggs
- 1 tsp fine salt
- 1/2 tsp black pepper
- 1/3 onion (finely chopped)
- 1/2 cup enoki mushrooms (finely chopped)
- 1 chili pepper (seeds removed and finely chopped)
- 1/4 cup water (approx. 60ml)

Step 1
First, let’s prepare the bell peppers. Choose plump ones that can stand upright easily. Carefully cut off the top part of the bell pepper, then use a spoon or a small tool to scoop out the insides cleanly. Make sure to remove all seeds and white pith for a neat filling.
Step 2
Now, it’s time to prepare the vegetables. Finely dice the onion or chop it into small pieces. Trim the base of the enoki mushrooms and slice them thinly. We’ll add a bit of spice with the chili pepper: remove the seeds completely and chop it finely. If you prefer less heat, you can reduce the amount of chili or omit it.

Next, we’ll make the egg mixture. Crack the 3 eggs into a bowl. Add all the prepared chopped vegetables (onion, enoki mushrooms, chili pepper). For a smooth texture and seasoning, add 1 teaspoon of fine salt and 1/2 teaspoon of black pepper, then mix well. Taste and adjust the salt if necessary. To make the steamed egg even smoother, add 1/4 cup (about 60ml) of water and stir gently to avoid creating too many bubbles.
Step 4
To make pouring the egg mixture into the bell peppers easier, it’s helpful to use a cup with a wide opening or a measuring cup. This allows you to fill them neatly without spilling.
Step 5
Carefully pour the egg mixture into the prepared bell peppers. It’s best to leave a little space at the top (about 1cm) rather than filling them completely. This accounts for the egg mixture puffing up as it cooks.
Step 6
Now, it’s time to cook. Place the lids back on the bell peppers, then microwave them for about 6 minutes. (Cooking time may vary depending on your microwave’s power. It’s recommended to start with 5 minutes, check the consistency, and then add more time if needed.) This method results in a steamed egg that is incredibly soft and delicious, just like it was cooked in a casserole! If you don’t have a microwave, you can also steam them in a steamer basket over medium-low heat for about 15-20 minutes for excellent results. Enjoy them immediately while they are warm.
