Super Simple Brunch! How to Make Refreshing & Sweet Fruit Open Sandwiches
This recipe is perfect for those days when you don’t feel like cooking but crave a delicious brunch at home. Simply toast your bread until golden, spread with creamy cheese and sweet jam, then top with fresh fruits. I used whatever fruits I had on hand. The combination of sweet banana and cream cheese is absolutely delightful! If you have strawberries, they would add even more color and flavor, but even with the ingredients available today, you can create a wonderfully satisfying open sandwich.
Basic Ingredients- Baguette bread, 3-4 slices (about 1cm thick)
- Banana, 1/3
- Apple, 1/4
- Cherry tomatoes, 3
- Fresh basil leaves, 5-6
- Cream cheese, about 2 Tbsp
- Strawberry jam, about 1.5 Tbsp
Cooking Instructions
Step 1
First, prepare your fresh produce. Gently wash the basil leaves and pat them dry. Rinse the banana, apple, and cherry tomatoes thoroughly under running water.

Slice the prepared fruits thinly. Cut the banana into approximately 0.5cm thick rounds. Thinly slice the apple, similar in thickness. Halve or quarter the cherry tomatoes into bite-sized pieces.
Step 3
Toast the baguette slices in a toaster or on a pan until they are golden brown and slightly crisp. It’s important not to toast them too hard, so they aren’t overly crunchy. These warm, toasted slices will form the base of your open sandwiches.
Step 4
Spread a layer of smooth cream cheese evenly over the warm, toasted baguette slices. Next, add a dollop of sweet strawberry jam on top of the cream cheese. The creamy, tangy cheese and the sweet jam create a delightful flavor base.
Step 5
Now, artfully arrange the thinly sliced fruits and cherry tomatoes on top of the cream cheese and jam. Finally, garnish with a few fresh basil leaves for an aromatic and refreshing touch. This completes your beautiful fruit open sandwich! Feel free to add a drizzle of honey or some nuts for extra flavor if you like.
