Bell Pepper Tuna Pancakes

  • 1 Bell pepper
  • 1 can (approx. 150g) Tuna
  • 1/2 Onion
  • 1 Egg
  • Pinch of salt

First, wash the bell pepper thoroughly. You can wash it whole.

Slice the bell pepper into rounds about 0.5cm thick. Carefully use a knife to scoop out the seeds and inner membranes, leaving only the outer ring. These round bell pepper rings will make your dish look beautifully presented.

Finely chop the remaining parts of the bell pepper, such as the edges or any scraps left after cutting out the rings. These chopped pieces will be used in the tuna filling, adding extra flavor and texture.

In a bowl, drain most of the oil from the canned tuna and add it. Mix in the finely chopped bell pepper and the 1/2 onion. Crack in the egg and add a pinch of salt for seasoning. Use a spoon or fork to thoroughly combine all the ingredients. It’s important to break up any large clumps of tuna so the filling is well-mixed.

Heat a non-stick pan over medium-low heat. Place the bell pepper rings onto the pan. Spoon the prepared tuna mixture generously into each bell pepper ring, filling them evenly. As the filling cooks, it will puff up slightly. Once the bottom is golden brown, carefully flip the pancakes to cook the other side until golden brown and the tuna mixture is cooked through. Be mindful of the heat to prevent the bell pepper from burning. Once both sides are nicely browned, your delicious Bell Pepper Tuna Pancakes are ready to serve!
