  • 2-3 large fresh potatoes
  • 1/2 onion
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper

Seasoning

  • 2-3 Tbsp sunflower oil
  • 1 tsp fine salt (adjust to taste)
  • A little sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, peel the fresh potatoes and julienne them into strips about 0.3-0.5 cm thick. Rinse the julienned potatoes in cold water once or twice to remove excess starch, then drain them thoroughly in a colander. Using a mandoline slicer can help you cut uniform and attractive strips.

Thinly julienne the red bell pepper, yellow bell pepper, and half an onion. Try to cut them to a similar thickness for a visually appealing dish.

Heat 2-3 tablespoons of sunflower oil in a pan over medium heat. Add the drained potato juliennes.

Add 1 teaspoon of fine salt and stir-fry the potatoes, mixing well, until they become translucent. The saltiness is adjusted for a slightly savory side dish for rice; feel free to adjust it if you’re making it as a snack for children. Cook over medium heat.

Once the potato juliennes are more than halfway cooked and translucent, add the prepared bell peppers and onion. Stir-fry quickly until the onion becomes translucent. Be careful not to overcook, as this can make the vegetables mushy.

Finally, drizzle in sesame oil and mix well. Sprinkle with 1 tablespoon of toasted sesame seeds. Turn off the heat, cover the pan for about 30-40 seconds to let the residual heat finish cooking the potatoes, ensuring they are tender without being mushy. This steaming step helps ensure any slightly undercooked potatoes are perfectly cooked and enhances the overall flavor. Gently stir everything together after opening the lid to complete your delicious bell pepper and potato stir-fry!
