Baby Bell Pepper Vegetable Fried Rice: A Simple Toddler Meal Recipe
A perfect one-dish meal for picky eaters, made by a working mom! Introducing a nutritious vegetable fried rice that’s both delicious and visually appealing for your little one.
Main Ingredients
- Bell pepper 50g (use various colors for visual appeal)
- Enoki mushrooms 30g
- Zucchini 30g
- Onion 30g
- Carrot 30g
- Cooked rice 80g (warm, freshly cooked rice)
- Egg 1 large

- Unsalted butter 5g
- Oyster sauce 0.5 Tbsp (use mild, kid-friendly version)
- Sesame oil 1 Tbsp

Cooking Instructions
Step 1
I’ve selected vegetables that I know my child enjoys. Using bell peppers in various colors will create a visually appealing fried rice that captures your child’s attention.
Step 2
For children who are particular about texture, finely mince the vegetables into very small pieces. This makes them easier for your child to chew and less likely to be rejected.
Step 3
Preheat a pan over medium heat and melt the 5g of unsalted butter. Once the butter is melted, add the firm carrots first and sauté them until fragrant. Carrots take longer to cook, so it’s best to start with them.
Step 4
When the carrots are slightly tender, add the remaining vegetables (bell pepper, zucchini, onion, enoki mushrooms) and stir-fry everything together. Continue to cook until the vegetables soften and are tender.
Step 5
In a separate bowl, prepare 80g of cooked rice and 1 egg. We’ll mix the egg with the rice beforehand.
Step 6
Mixing the egg with the rice before cooking helps to coat each grain of rice, resulting in a softer fried rice. It also prevents the rice from clumping, leading to a cleaner presentation, much like an egg fried rice!
Step 7
Push the sautéed vegetables to one side of the pan. Add the rice coated with the egg mixture to the empty space and begin to stir-fry. The key is to gently break up the rice clumps with your spatula as you cook.
Step 8
Once the rice is cooked to your liking, add half a tablespoon of mild oyster sauce designed for children. Oyster sauce adds umami, but be mindful not to use too much for your little one.
Step 9
Finally, drizzle in 1 tablespoon of sesame oil for added aroma and flavor. Sesame oil enhances the nutty fragrance, which can entice your child to eat more.
Step 10
Stir-fry everything together one last time to ensure all ingredients are evenly heated and coated with the seasoning. Transfer the finished fried rice to a nice plate, and you’ve prepared a delicious meal for your child! Enjoy your mealtime together! ♥
