Easy and Delicious Vegetable Fried Rice Golden Recipe
Introducing a healthy vegetable fried rice recipe that uses up leftover vegetables from your fridge to create a wonderful meal. The texture of abundant vegetables combined with a savory sauce makes it a dish everyone from children to adults will love.
Main Ingredients- 1/4 Green onion, finely chopped
- 1/2 Onion, diced
- 1/2 Zucchini, diced
- 1/2 Carrot, diced
- 2 Eggs, lightly beaten
- 4 bowls Cooked rice, warm
Seasoning- Olive oil (for stir-frying)
- 1/2 Tbsp Sesame oil
- 1/2 Tbsp Oyster sauce
- 1 Tbsp Soy sauce
- 1 Pinch of salt
- 1/2 Tbsp Oligosaccharide (or honey/corn syrup)

Cooking Instructions
Step 1
Heat 1-2 tablespoons of olive oil in a wok or deep pan over medium-low heat. Add the finely chopped green onion and stir-fry for 1-2 minutes until fragrant, creating a flavorful green onion oil. Be careful not to burn the green onion; gentle frying is key to releasing its aroma.
Step 2
Add the diced carrots, zucchini, and onion to the pan. Increase the heat to high and stir-fry for 7 minutes. The goal is to cook the vegetables until tender-crisp. Add a little more olive oil as needed during stir-frying to prevent sticking. While the vegetables are cooking, lightly beat the 2 eggs in a separate bowl.
Step 3
Once the vegetables are somewhat cooked, pour the beaten eggs into the pan. Add the oyster sauce (1/2 Tbsp), soy sauce (1 Tbsp), salt (1 pinch), and oligosaccharide (1/2 Tbsp). Stir-fry for another 5 minutes over medium heat until the eggs are cooked through and slightly golden brown. The soy sauce and oyster sauce will infuse the vegetables and eggs with a delicious umami flavor.
Step 4
Finally, drizzle in the sesame oil (1/2 Tbsp) for added fragrance. Add the 4 bowls of warm cooked rice. Gently break up any clumps of rice with your spatula and stir-fry everything together for another 5 minutes, ensuring the rice is evenly coated with the ingredients and seasonings.
