Although a picnic wasn’t possible, I prepared a ‘Soboro Donburi’ lunchbox to enjoy while gazing out at the autumn scenery. This recipe offers a delightful visual and flavorful experience, perfect for a home-cooked meal.

In a bowl, crack 2 fresh eggs. Add 1/2 teaspoon of soy sauce and 1/2 teaspoon of sugar. Whisk thoroughly until well combined. Heat a non-stick pan over medium-low heat, pour in the egg mixture, and stir with chopsticks to scramble into fluffy curds. Be careful not to burn the eggs; maintaining medium-low heat is key.

Stir continuously to prevent sticking and burning.
