This chive pancake is a delight, made with fresh chives, plump shrimp, and sweet carrots, offering a wonderful texture and rich flavor. The addition of cocktail shrimp adds a luxurious touch, while the crisp carrots provide a unique bite. Lightly seasoned with fish sauce, it can be enjoyed without a separate dipping sauce. (Feel free to adjust seasoning to your preference. Salt can be used instead of fish sauce.)

Delicious Chive Pancake Ingredients

  • 50g fresh chives
  • 62g frozen cocktail shrimp
  • 35g crisp carrot
  • 50g pancake mix (buchim garu)
  • 100ml cold water
  • 0.3 Tbsp fish sauce (like Kkanari Aekjeot)
  • Sesame oil for frying, as needed

Cooking Instructions

Step 1

First, prepare 50g of fresh chives. Trim off any wilted or yellowed parts. Fill a wide bowl with enough water to cover the chives and gently swish them around to wash. Rinse under running water about 4 times until clean, then gently pat dry to remove excess water.

Cut the cleaned chives into approximately 3cm lengths. This size is perfect for the pancake.

Rinse the frozen cocktail shrimp briefly under cold running water to thaw. Julienne the carrot into thin strips.

Remove the tails from the thawed shrimp. Cut the shrimp into bite-sized pieces, ensuring they are not too small so you can still feel their texture when you eat.

In a bowl, combine the prepared chives, julienned carrots, and cut shrimp. Mixing the ingredients first helps ensure the batter coats them evenly.

Now, let’s make the batter. Add 50g of pancake mix, 100ml of cold water, and 0.3 Tbsp of fish sauce for a savory depth of flavor.

Using a spoon or spatula, stir the batter until all ingredients are well combined. Avoid overmixing; just mix enough to coat the chives and other ingredients without forming lumps.

Heat a pan over medium or medium-low heat and add a generous amount of sesame oil. Ladle about half a portion of the batter onto the pan, spreading it out into a round shape. Keep it relatively thin so it cooks through evenly.

When the edges of the pancake start to firm up and the moisture from the chives seems to reduce slightly, it’s time to flip. Use a spatula to carefully flip the pancake over.

After flipping, gently press down on the pancake with the spatula to flatten it. If the pan seems dry, add a little more sesame oil around the edges to help it crisp up beautifully.

Gently lift the pancake to check if the bottom is golden brown. Once it is, flip it one more time and cook for about 30 seconds. This final quick fry ensures it’s extra crispy. Turn off the heat.
