Ingredients- 14 chicken wings
- 1 Tbsp cooking wine (mirin or sake)
- Pinch of salt
- Pinch of black pepper
- 4 cloves garlic
- 2 green onions
Braising Sauce Ingredients- 1 paper cup cola (approx. 200ml)
- 3.5 Tbsp soy sauce
- 1/3 Tbsp red pepper flakes (or dried chili)
- 1 paper cup cola (approx. 200ml)
- 3.5 Tbsp soy sauce
- 1/3 Tbsp red pepper flakes (or dried chili)
Cooking Instructions
Step 1
First, wash the chicken wings thoroughly. Make 2-3 shallow cuts into each wing; this helps the sauce penetrate better and speeds up the cooking. Thinly slice the garlic cloves (about 0.3cm thick) and cut the green onions into roughly 5cm lengths. Prepping the ingredients like this will make the cooking process much smoother.
Step 2
Place the prepared chicken wings in a bowl. Pour in 1 Tbsp of cooking wine to help tenderize the meat and remove any gamey odor. Sprinkle with a pinch of salt and pepper. Gently toss to coat the wings evenly and let them marinate for about 10 minutes. This marinating step enhances the flavor significantly.
Step 3
Heat a frying pan over medium heat and add enough cooking oil to coat the bottom. Carefully place the marinated chicken wings in the pan. Instead of high heat, cook them over medium heat, flipping them occasionally until they are golden brown and slightly crispy on both sides. Getting a nice sear on the outside is key for a great texture after braising.
Step 4
Once the chicken wings are browned, push them to one side of the pan. Add the sliced green onions and garlic to the other side and sauté until fragrant. Now, pour in the cola (1 paper cup), soy sauce (3.5 Tbsp), and red pepper flakes (1/3 Tbsp). Stir everything together to combine the sauce. Bring the sauce to a boil, then reduce the heat to medium-low. Cover the pan and let the wings simmer gently for about 15-20 minutes, or until the sauce has thickened and coats the wings beautifully. Stir occasionally to prevent sticking, and serve once the liquid has reduced to a glossy glaze.
