My Ultimate Favorite: Coffee-Infused Langues de Chat (Cigarette Cookies)

There’s a cookie recipe I’ve wanted to try for a long time. When I saw the ingredients, it looked like it would perfectly suit my taste, so I decided to give it a go! Although I don’t drink coffee often, I absolutely adore desserts flavored with coffee. That’s why I made these Langues de Chat cookies with coffee. I generally prefer coffee-flavored snacks and ice cream; perhaps it’s a matter of constitution, but while I can’t drink coffee directly, I don’t dislike the flavor itself. The moment I tasted my creation, I knew it was a perfect match for my palate! Not only did I love them, but my children also raved about how delicious they were, eating them up so quickly that I had to bake them twice! It’s especially gratifying that even my younger daughter, who usually dislikes cookies and bread, found them delicious. It makes me happy that she’s starting to enjoy the baked goods I make. Ingredients
  • Cake flour 30g
  • Almond flour 30g
  • Egg whites 2 (approx. 60-70g)
  • Unsalted butter 40g (softened at room temperature)
  • Heavy cream 10g
  • Powdered sugar 75g
  • Instant coffee powder 1g (or espresso powder)
  • Vanilla oil 1 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the ingredients for a smooth batter. In a bowl, place 40g of softened butter at room temperature. Use a hand mixer or a whisk to cream it until smooth and fluffy. Sift in 75g of powdered sugar and whip them together until a light ivory color is achieved. It’s important to whip until the sugar is fully incorporated and dissolved.

Step 2

Next, gradually add the egg whites, a little at a time, while whipping until stiff peaks form. Ensure the mixture doesn’t separate by whipping thoroughly after each addition of egg white. Now, add 10g of heavy cream, 1 Tbsp of vanilla oil, and 1g of instant coffee powder. Mix well until combined. For a more intense coffee flavor, finely ground coffee or espresso powder works best.

Step 3

It’s time to add the dry ingredients. Sift in 30g of cake flour and 30g of almond flour. Use a spatula to gently fold them into the wet ingredients until just combined and no dry streaks remain. Be careful not to overmix, as this can result in tough cookies. Your basic Langues de Chat batter is now ready.

Step 4

Transfer the batter into a piping bag. If you don’t have one, a sturdy plastic bag with a corner snipped off will also work. Prepare a baking sheet by lining it with parchment paper to prevent sticking. Pipe the batter onto the prepared baking sheet in your desired shapes. Langues de Chat are traditionally piped into thin, elongated strips.

Step 5

After piping the batter, use the back of a spoon or a small spatula to gently spread each piped shape thinly and evenly. The cookies will puff up slightly during baking, so ensuring a uniform, thin layer is key to achieving maximum crispiness.

Step 6

Bake in a preheated oven at 180°C (350°F) for about 5 minutes. Baking time may vary depending on your oven, so keep an eye on them. They are ready when the edges begin to turn lightly golden brown. Be careful not to overbake, as they can burn quickly.
