I baked these Coffee Almond Scones to gift to my friends. Having already proven how delicious basic scones can be, I knew these would make an excellent gift. This time, I’ve upgraded the recipe by adding coffee and almonds for an even richer flavor and aroma. As the scones bake, the wonderful scent of coffee and the nutty fragrance of almonds fill the entire house – a truly delightful experience. The moment you take a bite of a warm, freshly baked scone, it melts softly in your mouth, offering an incredibly satisfying taste. Scone Dough Ingredients- 320g Low-gluten flour (cake flour)
- 6g Baking powder
- 80g Milk
- 20g Heavy cream
- 3g Salt
- 2g Instant coffee granules
- 2g Vanilla extract
- 90g Sugar
- 1 large Egg (room temperature)
Cooking Instructions
Step 1
First, in a bowl, combine the sifted low-gluten flour, baking powder, sugar, salt, and instant coffee granules. Mix them lightly. Add cold butter cut into small cubes to the bowl. Using your fingertips, rub the butter into the flour mixture until it resembles coarse breadcrumbs or small pebbles. (It’s important to work quickly to prevent the butter from melting!).
Step 2
In a separate bowl, whisk together the milk, heavy cream, vanilla extract, and egg until well combined. Pour this liquid mixture into the bowl with the dry ingredients. Using a spatula or a fork, gently mix just until no dry flour streaks remain and the dough just comes together into a ball. Be careful not to overmix, as this can result in tough scones.
Step 3
Turn the dough out onto a lightly floured work surface. Gently fold the dough 2-3 times, then flatten it into a disk about 2cm (about 0.8 inches) thick. Cut out your desired scone shapes using a cookie cutter or a knife. (If you like, sprinkle almond slices on top of the dough and gently press them in at this stage).
Step 4
Place the shaped scones onto a baking sheet lined with parchment paper, ensuring there’s some space between each one. Bake in a preheated oven at 180°C (350°F) for approximately 20-25 minutes, or until they are golden brown. Baking time may vary depending on your oven’s specifications, so keep an eye on them.
Step 5
Once baked, remove the scones from the oven and let them cool completely on a wire rack. While they are delicious served warm, allowing them to cool fully before enjoying with coffee or tea will enhance their rich flavors.
