Cockle and Sprout Bibimbap: A Quick and Delicious Meal
Easy and Delicious Cockle Sprout Bibimbap Recipe
I spotted cockles on sale at the supermarket and couldn’t resist bringing them home! I made cockle soy noodle soup for the kids, and for us adults, we enjoyed this delightful cockle sprout bibimbap. It’s a simple yet incredibly tasty dish that perfectly combines the chewy texture of cockles with the fresh crunch of sprouts.
Main Ingredients- 60g cooked cockles
- 1 handful of sprouts (approx. 30-40g)
- 1 bowl of warm rice (approx. 200g)
Seasoning Sauce- 2 Tbsp Hongge soy sauce or regular soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp plum extract (maesilcheong)
- 0.5 Tbsp red pepper flakes (gochugaru)
- A pinch of sesame seeds (approx. 1 tsp)
- 2 Tbsp Hongge soy sauce or regular soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp plum extract (maesilcheong)
- 0.5 Tbsp red pepper flakes (gochugaru)
- A pinch of sesame seeds (approx. 1 tsp)
Cooking Instructions
Step 1
First, let’s prepare the cockles. To clean them thoroughly, sprinkle a little coarse salt on them and scrub them under cold running water. In a pot, bring plenty of water to a boil. Add the cockles and stir them in one direction as they cook. (Pro tip for easy opening: Insert a spoon into the hinge side of the cockle shell and twist gently to separate the shells.) Once the cockles start to open, immediately remove them from the heat and drain. Overcooking can make them tough.
Step 2
Prepare a large mixing bowl. Place the warm bowl of rice nicely in the center. Top the rice generously with the washed and drained sprouts. Finally, artfully arrange the prepared chewy cockles over the sprouts and rice. This creates a visually appealing and hearty base for your bibimbap.
Step 3
Now, let’s make the delicious seasoning sauce. In a small bowl, combine 2 tablespoons of Hongge soy sauce (or regular soy sauce), 1 tablespoon of fragrant sesame oil, 1 tablespoon of sweet and tangy plum extract, and 0.5 tablespoon of red pepper flakes for a hint of spice. Whisk these ingredients together until well combined to create a flavorful sauce.
Step 4
Drizzle the prepared seasoning sauce evenly over the rice, sprouts, and cockles in the mixing bowl. You can adjust the amount of sauce to your preference, ensuring it coats all the ingredients beautifully.
Step 5
Now that all the components are ready, it’s time to mix and enjoy! Using a spoon, gently toss everything together – the rice, sprouts, cockles, and sauce – until well combined. The aroma of sesame oil, the savory soy sauce, the chewy cockles, and the crisp sprouts will create a truly wonderful explosion of flavors. Enjoy your delicious meal!
