  • 1 Squid (cleaned and prepared)
  • 200g King Oyster Mushrooms (trimmed and separated into strands)
  • 1/4 block Firm Tofu (cubed)
  • 1/2 stalk Scallion (sliced diagonally)
  • 1 Korean Green Chili Pepper (finely chopped, optional)
  • 1/3 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, let’s make a clear and refreshing broth. In a pot, add 5 cups (approx. 1L) of water, dried anchovies or kombu if using, and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 5-10 minutes. Then, remove the anchovies or kombu, leaving only the clear broth. (If you prefer a very light taste, you can simply use plain water.)

While the broth is simmering, prepare the squid. Cut the cleaned squid into bite-sized pieces. It’s important not to overcook it to maintain a pleasant chewy texture.

Add the prepared squid to the simmering broth and bring it to a gentle boil. This allows the fresh flavor of the squid to infuse into the soup. Skim off any foam that rises to the surface for a cleaner broth.

As the squid begins to cook, add the king oyster mushrooms. These mushrooms will add a tender texture and a subtle earthy aroma, enriching the soup’s flavor.

Next, add the cubed tofu. Tofu contributes a smooth element to the soup and makes it more filling. Once the tofu starts to float, it indicates it’s nearly cooked, and it’s time to season.

Finally, add the diagonally sliced scallions, chopped green chili peppers (if you like a little heat), and 1/3 Tbsp of minced garlic. Season the soup with fish sauce or soy sauce, starting with about 1 tablespoon and adjusting to your preference. Use a pinch of salt for fine-tuning the taste. Let it simmer briefly for all the flavors to meld together, and your delicious Squid and Mushroom Soup is ready!
