Clear Shrimp Pho for a Warm Meal
[Vietnamese Pho] A Clear Pho with Only Shrimp
The temperature has dropped sharply lately, making me crave a warm, comforting soup. Looking at the calendar, today is the start of winter (no wonder… haha). While slurping pasta noodles when they’re warm is nice, it can’t compare to a soupy noodle dish.
Ingredients
- 80g Rice Noodles
- 1 serving Pho Soup Base
- 3 Shrimp
- 3 slices Lemon
Cooking Instructions
Step 1
Before boiling the rice noodles, they need to soak in water for at least 30 minutes. Be sure to include this soaking time when calculating your total preparation time for a more relaxed cooking experience.
Step 2
I happened to have a 2-serving pack of pre-portioned pho soup base, so I prepared that. This brand has a slightly stronger star anise flavor than others, which I personally enjoy more. Feel free to choose your preferred brand!
Step 3
Pour water into a pot, add the soup base, and bring it to a boil. This will create a flavorful broth for your pho.
Step 4
Cook the soaked rice noodles according to the package instructions. A helpful time-saving tip: after removing the noodles, add the shrimp directly to the hot noodle water to cook them. This saves a pot and allows the shrimp to impart their sweetness into the broth.
Step 5
Briefly blanch the bean sprouts in the boiling water as well. Since bean sprouts can be eaten raw, the blanching time is really up to your preference! 🙂
Step 6
I personally prefer them slightly blanched. It looks like a mix of half noodles and half bean sprouts here. ^^
Step 7
Garnish with lemon slices and chopped chives for a touch of freshness.
Step 8
Finally, add the cooked shrimp on top, and your delicious pho is complete! Enjoy your hearty meal.
