Clear Potato and Mushroom Soup
Super Simple and Refreshing Potato Mushroom Soup (An Easy, Light Broth Dish for Anyone)
As we step into early winter, this potato and mushroom soup is perfect for a light breakfast. This clear broth dish will warm you up, boosting your body temperature and leaving you feeling satisfied. It’s a comforting and nourishing meal.
Ingredients- 2 medium potatoes
- 1 shiitake mushroom
- 1/2 stalk green onion (scallion)
- 1 anchovy and kelp broth pack
- 800ml water
Seasoning- 1 Tbsp tuna extract (or fish sauce)
- 1 Tbsp minced garlic
- 0.5 Tbsp salt (adjust to taste)

Cooking Instructions
Step 1
In a pot, combine 800ml of water and 1 anchovy and kelp broth pack. Bring to a boil over high heat, then reduce to medium heat and simmer for about 5 minutes to create a flavorful broth.
Step 2
While the broth is simmering, peel the potatoes and cut them into pieces of similar length, about 0.5cm thick, ensuring they won’t fall apart when cooked. Remove the stems from the shiitake mushroom and thinly slice the caps. Thinly slice the green onion diagonally.
Step 3
Once the broth is boiling, remove the broth pack. Add the sliced potatoes and continue to boil over medium heat. Cook for about 5-7 minutes, or until the potatoes are halfway cooked.
Step 4
When the potatoes are becoming tender, add the sliced shiitake mushrooms and simmer together. The mushrooms will release their flavor, enriching the broth. Cook for another 3 minutes.
Step 5
Add the seasoning ingredients. Stir in 1 Tbsp of minced garlic and 1 Tbsp of tuna extract. Add 0.5 Tbsp of salt (or soy sauce) to season. It’s best to start with a little and add more later if needed.
Step 6
When the soup returns to a boil, add the sliced green onions. Finally, add a pinch of black pepper for aroma. Cook for just 1 minute more, until the green onions are slightly softened.
Step 7
Taste the soup and adjust the seasoning with salt if necessary. Your clear and refreshing potato mushroom soup is ready! Serve hot and enjoy.
