Clear and Transparent Droplet Jelly (Mizu Washi)

I wanted to make this ever since I saw how pretty it looked! The method and ingredients are surprisingly simple, so I tried it right away! Shall we try making these lovely street-food-style droplet jellies? 😀

Ingredients

  • 3 sheets of leaf gelatin
  • 2-300ml of Cider (using one with less or no carbonation is recommended)
  • 2-3 strawberries (or other favorite fruits)

Cooking Instructions

Step 1

First, soak the 3 sheets of gelatin in plenty of cold water for about 5-10 minutes until fully softened. This step is to allow the gelatin to rehydrate.

Step 2

While the gelatin is soaking, gently heat 200-300ml of cider in a pot over low heat. Just before it boils, when you see a slight steam rising, turn off the heat immediately. Boiling will cause the carbonation to dissipate and the gelatin might not dissolve properly.

Step 3

Transfer the softened gelatin sheets from the water into the warm cider (off the heat) and stir well with a whisk or spatula until the gelatin is completely dissolved. It should be smooth with no lumps.

Step 4

Pour about half of the gelatin-cider mixture into your chosen mold or cup. Then, place one piece of your prepared fruit (like a strawberry) into the center. Feel free to use any fruit you like!

Step 5

After adding the fruit, don’t immediately pour the rest of the mixture. Instead, place the mold in the refrigerator briefly to let the bottom layer set slightly. Once it’s partially firm, pour the remaining gelatin-cider mixture to fill the mold completely. This technique ensures the fruit stays perfectly centered for a beautiful presentation when the jelly is finished.

Step 6

Refrigerate the droplet jelly for at least 2-3 hours, or until completely firm. It needs to set thoroughly so it holds its shape when unmolded.

Step 7

To unmold the jelly, briefly dip the mold in lukewarm water. This will help release it easily without damaging the shape. (Refer to the video for a visual guide on unmolding!)

Step 8

Optionally, prepare a topping. (I substituted roasted soybean powder (misugaru) for Injeolmi powder because I didn’t have it… but it’s just okay, haha. > < Anyway, your beautiful droplet jelly is complete!)
