Ingredients

  • Napa Cabbage 2 leaves (large)
  • Onion 1/2 (medium)
  • Tofu 1/2 block (firm or silken)
  • Minced Garlic 1 Tbsp
  • Salted Shrimp (Saeu-jeot) 1/2 Tbsp (adjust to taste)
  • Green Onion 1 Tbsp (chopped)
  • Soup Stock Pack 1 (containing dried anchovies, kelp, etc. or homemade broth)
  • Water 1 Liter

Cooking Instructions

Step 1

First, prepare the flavorful broth by boiling 1 liter of water with the soup stock pack. If you don’t have a stock pack, you can use dried anchovies and kelp. (Boil for about 10 minutes, then remove the stock pack.)

Wash the napa cabbage leaves thoroughly and cut them into bite-sized pieces, about 2-3 cm. Be careful not to cut them too small, as they might break apart while cooking.

Slice the half onion thinly or chop it roughly. Slicing it this way will help its sweetness and flavor infuse well into the soup.

Prepare the tofu by cutting it into cubes of about 1-2 cm. You can omit or add tofu according to your preference.

Once the prepared broth is boiling vigorously, add the cut napa cabbage and onion. If you prefer a softer texture, add the tofu at this stage as well.

Add 1 tablespoon of minced garlic to enhance the soup’s refreshing taste. Stir well to distribute the garlic aroma throughout the broth.

Seasoning with salted shrimp adds a deep umami flavor to the soup. Start with 1/2 tablespoon of salted shrimp, taste, and adjust the amount according to your preference. You can also use soy sauce or salt if you prefer.

Finally, add the chopped green onions and simmer for a little longer. The refreshing aroma of the green onions will add to the soup’s deliciousness.
