Soaking the Seaweed

  • 1 bowl of dried seaweed (approx. 20g)
  • 2L water (cold or filtered)

Seasoning

  • 3 Tbsp sesame oil
  • 2 Tbsp soy sauce for soup (guk-ganjang)
  • 1 Tbsp salt (or to taste)

First, prepare your dried seaweed. It’s important to choose good quality dried seaweed. Soak the dried seaweed in 2L of cold or filtered water for about 10 minutes until it becomes soft and fully rehydrated.

After soaking, rinse the rehydrated seaweed under running water two to three times. This step is crucial to remove any sand or impurities. Gently squeeze out excess water, then place the seaweed in a colander to drain.

Cut the drained seaweed into bite-sized pieces (about 2-3 cm long). Heat a pot over medium heat and add 3 tablespoons of sesame oil. Add the cut seaweed and sauté for about 1 minute, stirring constantly and mixing well with the sesame oil. Sautéing until the seaweed wilts and releases a fragrant aroma is key.

Once the seaweed is well sautéed, pour in 2L of water. Add 2 tablespoons of soy sauce for soup (guk-ganjang) and 1 tablespoon of salt to season. Bring the soup to a boil over high heat for the first 5 minutes. Once it starts boiling vigorously, reduce the heat to low and simmer for another 5 minutes. Even without beef, this soup has a wonderfully deep and clean flavor. Taste and adjust the salt if needed.
