Clear and Savory Beef Bone Marrow Sundae Gukbap
Super Simple Beef Bone Marrow Sundae Gukbap Recipe
This recipe offers a delightful twist on traditional Sundae Gukbap, using a clear and savory beef bone marrow broth instead of the usual pork. This light yet flavorful broth perfectly complements the chewy sundae, fresh chives, and green onions, making it a satisfying meal. It’s a dish that both children and adults will love, and you can easily adjust the spice level to your preference. Enjoy the taste your family loves, right in your own home!
Basic Ingredients- Beef bone marrow broth 1,000ml (store-bought or homemade)
- Sundae 1 pack (approx. 300-400g)
- Chives, chopped (a handful)
- Green onion 1/2 stalk (cut into large pieces)
- Minced garlic 1 Tbsp
Cooking Instructions
Step 1
First, pour 1,000ml of beef bone marrow broth into a pot and bring it to a boil over high heat. If you’re using store-bought broth, warm it up first.
Step 2
Cut the sundae into bite-sized pieces. Cutting them too small can reduce the chewy texture, so a thickness of about 1.5-2 cm is recommended. Chop the green onions into large pieces, and if you like, chop the Cheongyang and red chili peppers as well.
Step 3
Once the broth is boiling vigorously, add the cut sundae, green onions, and minced garlic. If you prefer a spicier taste, add the gochugaru and the prepared chili peppers at this stage.
Step 4
Cheongyang chili peppers can lose their spiciness if added too early. To enjoy a more pungent flavor, add them near the end of cooking or just before serving. (Optional)
Step 5
When the sundae is cooked and floats to the surface, add the chopped chives and simmer for a short while longer. Chives can become soggy if overcooked, so cook them just until wilted. Taste the broth and adjust seasoning with salt if needed.
Step 6
Before turning off the heat, stir in 2 tablespoons of perilla seed powder for a nutty aroma and finish with a sprinkle of black pepper.
Step 7
The finished Beef Bone Marrow Sundae Gukbap boasts a fantastic harmony of rich broth and chewy sundae. For the children’s version, omit the gochugaru and spicy peppers to make it mild; they’ll absolutely love it! My husband found the broth so delicious that he added more gochugaru and Cheongyang peppers and devoured his second bowl in no time! This clear and deeply flavorful Sundae Gukbap is a must-try!
