Clear and Savory Beef and Radish Soup

While spicy beef soup is delicious, sometimes a light and clean broth is just what you need to comfort your soul. Today, we’re making a simple and clear beef soup! It’s perfect for warming up on a chilly day.
Main Ingredients
- Beef (for soup) 400g
- Korean Radish (Moo) 1/4 large (approx. 300g)
- Tofu 1 block (approx. 300g)
Seasoning & Aromatics
- Green Onion 1 stalk
- Minced Garlic 1 Tbsp
- Soy Sauce for Soup (Gukganjang) 2 Tbsp
- Fish Sauce (anchovy or sand lance) 2 Tbsp
- Sesame Oil 1 Tbsp
- Water 1.5~2 liters (8~10 cups)
- Green Onion 1 stalk
- Minced Garlic 1 Tbsp
- Soy Sauce for Soup (Gukganjang) 2 Tbsp
- Fish Sauce (anchovy or sand lance) 2 Tbsp
- Sesame Oil 1 Tbsp
- Water 1.5~2 liters (8~10 cups)
Cooking Instructions
Step 1
First, prepare 400g of beef cut for soup. Patting it dry with paper towels is key to a clear broth. Heat 1 Tbsp of sesame oil in a pot over medium heat. Add the beef and stir-fry until it changes color and is no longer pink.
Step 2
Once the beef is browned, add the Korean radish, cut into bite-sized cubes (about 300g), and stir-fry together for about 2-3 minutes until the radish starts to look translucent. Adding 1 Tbsp of soy sauce for soup at this stage will help season the beef and radish, deepening the flavor.
Step 3
Pour in 1.5 to 2 liters (about 8-10 cups) of water. Using fresh water will result in a cleaner tasting broth. Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium.
Step 4
As the soup comes to a rolling boil, skim off any foam or impurities that rise to the surface with a spoon. This step is crucial for a clear and clean broth. After skimming, carefully add the block of tofu, cut into cubes.
Step 5
The soup is nearly ready when the tofu cubes float to the surface. While the tofu is cooking, skim off any foam that appears. Now it’s time to season. Add the remaining 1 Tbsp of soy sauce for soup and 2 Tbsp of fish sauce. Adjust the amount of soy sauce and fish sauce to your preference. Finally, stir in 1 Tbsp of minced garlic and 1 stalk of thinly sliced green onion. Let it simmer for another minute to meld the flavors. Serve hot and enjoy!
