Here’s a clear soft tofu stew with zucchini, offering a wonderfully refreshing and clean taste. It’s a perfect meal for busy mornings, easy on the stomach and packed with nutrition, loved by everyone. Since it’s mild, even children can enjoy it. Main Ingredients

  • 1 packet Soft Tofu (approx. 300-400g)
  • 1/4 Zucchini (approx. 50g)
  • 1/4 Onion (approx. 50g)
  • 1 Korean Chili Pepper (optional, for spice adjustment)
  • 1 Tbsp Scallion whites (approx. 20g)
  • 300ml Broth (anchovy-kelp or rice water)

Seasoning

  • 1 Tbsp Saeujeot (fermented salted shrimp, minced)
  • 1 Tbsp Fish Sauce or Soy Sauce for soup
  • 1/2 Tbsp Minced Garlic

Cooking Instructions

Step 1

Before you start cooking the stew, prepare a delicious broth. Using an anchovy-kelp broth or rice water will add a deeper flavor. Chop the vegetables into bite-sized pieces.

Carefully unpack the soft tofu and cut it into manageable pieces (about 2-3 cm). Place the cut tofu in a sieve to drain any excess water. This helps prevent the stew from becoming too diluted.

Thinly slice the onion. Cut the zucchini into half-moon shapes about 0.5 cm thick, or into quarters and then slice to 0.5 cm thickness. Slice the Korean chili pepper diagonally. (If cooking for children, omit the chili pepper or adjust the amount.)

All your ingredients are now prepped and ready! It’s time to cook up a delicious stew.

Pour 300ml of your prepared broth into a ttukbaegi (earthenware pot). Add the sliced onion and zucchini, and bring to a boil over high heat. Once it starts to simmer, add 1 tablespoon of minced saeujeot and 1 tablespoon of soup soy sauce or fish sauce to season. For a smoother texture, consider blending the saeujeot before adding it.

As the broth begins to boil again, gently add the cut soft tofu. Break it apart gently with your spoon, trying not to crumble it completely, so it maintains a nice shape in the stew.

Finally, add 1/2 tablespoon of minced garlic and let it simmer for another moment. Adding garlic towards the end preserves its aromatic flavor, as prolonged boiling can diminish it.
