Clear and Refreshing Squid and Radish Soup

Discover a wonderfully light and refreshing squid and radish soup, perfect for a comforting meal. This recipe uses frozen squid, making it incredibly easy to prepare. Its clear, deep broth is simply delightful and will have you reaching for seconds!
Main Ingredients- 2 frozen squids (cleaned)
- 50g radish (sliced into bite-sized pieces)
- 1/2 block firm tofu (cubed)
- 1/2 bunch enoki mushrooms (trim ends, separate strands)
- 1/3 stalk green onion (sliced diagonally)
- 1/3 Tbsp minced garlic
- 1 bouillon cube (or 500ml anchovy-kelp broth)
Cooking Instructions
Step 1
First, wash the radish and slice it into approximately 0.5cm thick, flat pieces. Place the sliced radish in a pot and add enough water to cover the squid and radish. (If not using a bouillon cube, prepare your anchovy-kelp broth at this stage.)
Step 2
Begin boiling the radish over high heat. Once the water is rapidly boiling, add the whole squid or squid cut into bite-sized pieces. (Scoring the squid beforehand helps it absorb flavor and become more tender.) Be careful not to overcook the squid, as it can become tough; simmer for just 1-2 minutes after adding it to the boiling water.
Step 3
Once the squid is somewhat cooked, add the cubed tofu and the enoki mushrooms (trimming the ends and separating the strands). Let it simmer gently over medium heat until the tofu floats to the surface. This process helps to clarify the broth and meld the flavors.
Step 4
When the tofu floats, add the diagonally sliced green onions and minced garlic. Finally, season with soup soy sauce or fish sauce to your liking. A pinch of black pepper can enhance the aroma. Simmer for a short while longer to allow all the ingredients’ flavors to infuse the broth.
Step 5
Season to taste with soup soy sauce or fish sauce. The savory squid and the refreshing radish create a wonderfully clean and light broth. Enjoy this as a hearty meal with a bowl of warm rice!
