  • 11 cups Water (approx. 2.2L)
  • 2 Tbsp Salted Shrimp (Saewoojeot)

Cooking Instructions

Step 1

First, rinse the soybean sprouts under running water and drain them well. Place all the rinsed sprouts into a pot. Add 11 cups of water. The key here is to add just enough water to barely cover the sprouts. This precise water ratio is essential for a refreshing broth.

Step 2

Keep the pot lid completely open and bring the water to a rolling boil over high heat. Once boiling, gently stir the sprouts from the top to the bottom with a spoon. This step helps to remove any potential raw smell from the sprouts and makes the broth even more refreshing. Continue to boil over high heat with the lid off, ensuring the water boils evenly throughout.

Step 3

Once the soup is boiling vigorously, reduce the heat to medium-low. Now, cover the pot and let it simmer for about 5-7 minutes, or until the soybean sprouts are tender. Be careful not to overcook, as this can make the sprouts mushy. They should remain slightly crisp for the best texture.

Step 4

It’s time to season the soup. Add 2 tablespoons of salted shrimp (saewoojeot). Using salted shrimp adds a wonderful umami depth that greatly enhances the flavor of the soybean sprout soup. Adjust the amount according to your preference.
