This soft tofu stew features a light, clear broth that is incredibly soothing and easy on the stomach, making it perfect for a comforting meal. Generous amounts of clams add a delightful briny sweetness that enhances the overall flavor. For a cleaner eating experience, you can remove the clam shells, but keeping them intact can also add a visually appealing touch if you’re aiming for a special presentation.

  • 1 stalk of green onion (approx. 10cm)
  • 1 package (350g) silken soft tofu
  • 1 piece dried kelp (5x5cm)

  • 0.7 Tbsp salt
  • 0.5 Tbsp salted fermented shrimp (saeujeot)
  • 1 tsp sesame oil

Cooking Instructions

Let’s start by preparing the clams for a pristine broth. In a bowl, combine 3 cups of water with 0.7 Tbsp of salt to create a light saltwater solution. Add the fresh clams and let them soak in a dark place for at least 30 minutes to purge any sand or impurities. This step is crucial for achieving a clean-tasting soup.

Prepare the green onion, which will add a wonderful aroma. Thinly slice it crosswise into bite-sized pieces (about 0.5cm thick). These will float beautifully in the clear broth.

Now, let’s create a flavorful base. In a pot, add 2 and 1/4 cups of water. Place the dried kelp (rehydrated briefly if dried) and the purged clams into the pot. Bring to a boil over medium heat until the clams open their shells. Be careful not to overcook the clams, as they can become tough; stopping once they’ve opened is key.

Once the clams have opened, turn off the heat. Remove and discard the kelp. Carefully take out the opened clams. Let them cool slightly, then delicately remove the meat from the shells. (Tip: While you can leave the clams in their shells for presentation, removing the meat makes the stew much easier to eat.)

Back in the pot with the flavorful clam broth, gently add the silken soft tofu. You can add it whole or break it into large pieces with a spoon. Add the reserved clam meat back into the pot as well. Simmer gently until the tofu is heated through. Avoid boiling vigorously, as this can cause the delicate tofu to break apart.

Finally, let’s season this comforting stew. Stir in 0.5 Tbsp of salted fermented shrimp for a savory depth of flavor. Adjust the seasoning with a little more salt, if needed, to your personal preference. Add the sliced green onions and let it simmer for another moment. Finish by drizzling in 1 tsp of sesame oil just before serving to add a nutty aroma. Your delicious, clear, and soothing soft tofu stew is ready!
